I took it upon myself to get in the spirit of what's to come (since Im so eager already ;) to take time and start playing around with food. The house is warm ((only when Steve is not in the house)), decorations are in full spirit of sunflowers, pumpkins and harvest. Now, it smells of nothing but cinnamon and apples....mmmmm yum yum.
Here what I have been doing the last 16 hours. Well, sleeping of course but I just finished up my 2nd batch this morning. By letting them sit over night ((thanks Mom for the idea)) instead of just 9 hours, I do believe this batch is PERFECT!!!!

I started out with 12 apples. 4 Fiji, 4 Gala, 4 red delicious. Keeps the flavor well rounded when you have a variety.

You will need 2/3 cup of raw honey
3 tbs of Cinnamon
1/2 tsp of Nutmeg
8 1/2 pint size jars

Peel all the apples and core them. Toss them into a glass dish for the ingredients ((cinnamon, nutmeg and raw honey))you will be adding on top of them. Toss the apple slices around in the bowl with your hands to make sure the apples are all covered in the ingredients.

You will now then place the apples in your crock pot and cover and cook on HIGH for one hour. Then bring the apples down to a low temperature and allow them to cook for as long as you have time.
**I cook my at least for 12 hours. The softer the apples the more they soak up the cinnamon and nutmeg.

Once your cooking time is up. Turn off your crockpot and use a hand held mixer like the one in the picture. This will help to soften and blend in any apples still remaining whole. Once blended to liquid consistency your now ready to place the sauce in your 1/2 pint jars.

Let them cool for a little bit. I then place the lids on the jar and decorate with some pretty fabric in between both lids. Especially if using this as a gift. Spice it up a bit =)
Enjoy, I sure will.
